Saxenburg Pinotage 2020 grapes were hand-picked at physiological ripeness and destemmed into open fermenters. The crusher was removed, so the berries were left whole which, combined with only gentle pump-overs and cool fermentation temperatures, allowed for a soft extraction. The fermenting juice was pressed off the skins before fermenting dry, to prevent any bitterness at the end of ferment. Matured for 18 months in older oak barrels. Bottled at 13%. (Bottle size 750ml)

Nose: Beautiful mulberries, plums and cherries on the nose.

Palate: Hints of dark chocolate, plums and cherries. Powdery tannin structure.

Finish: A beautifully long finish with subtle notes of sweet spice such as cloves and star anise.
